Summer Popsicles: 3 Ways!

Summer is days away! What better way to cool down then with a homemade popsicle? Perfect for summer get-togethers or a mid-day snack. All the fun, none of the guilt. Here are three easy recipes to make your own fruity popsicles! Best part is you can customize this recipes as you please, substituting different fruits or beverages to try out new flavor combinations 🙂

*Note: Because popsicle molds with vary in size, most ingredient amounts are in ratios and not exact measurements. You will also need a popsicle mold of some sort. I used this Zoku Classic Pop Mold.

Honey Berry Froyo Popsicles

What You’ll Need:

  • 1 part fresh/frozen berries
  • 3 parts honey vanilla greek yogurt (full fat; this keeps the popsicle creamy, not icy)
  • 1 teaspoon sugar
  • honey, to sweeten as needed
  • honey nut granola


  1. Blend berries with sugar. If you’re using frozen berries, add a little liquid. Stop when it has reached your desired consistency (I blended until it was all entirely smooth, except for a few bits of berries for texture).
  2. Taste your yogurt and sweeten with honey if needed. I would definitely recommend The Greek Gods Greek Yogurt in Honey Vanilla. It was perfect as is (and this is coming from someone who usually hates greek yogurt)!
  3. In a bowl, swirl the berry mixture, fresh berries, and granola into the yogurt. Do this slowly and in a figure 8 motion. These swirls will work best if you use something like a chopstick or skewer, rather than a spoon. Do not overmix!
  4. Fill your mold with your honey berry yogurt mixture.
  5. Freeze 8+ hours. The longer the better to ensure that your popsicle doesn’t fall apart!

Mango Ginger Ale Popsicles 

What You’ll Need:

  • 1 part mango juice
  • 2 parts ginger ale
  • fresh/frozen mango, cubed

  1. Mix the mango juice and ginger ale thoroughly.
  2. Fill your mold 80% full with the mango-ginger ale (as the soda might expand as it’s freezing).
  3. Drop in as many mango pieces as you’d like! When adding fruits to your popsicle molds, be sure that the popsicle stick/handle can still be inserted properly. If it can’t, remove some of the fruit.
  4. Freeze 8+ hours.

Peach Tea Popsicles 

What You’ll Need:

  • 2 cups peach tea (I used Tiesta Tea’s Ginger Sweet Peach loose tea)
  • honey, to sweeten as needed
  • ripe peaches, sliced

  1. If you have pre-made peach tea, skip Steps 1 and 2. If you don’t, you can either:
    • Use peach loose leaf teas: make 2 cups (16 oz), following the instructions for that specific tea.
    • Use peaches and green/black tea: you can find many recipes for homemade peach tea but the gist of it is that you’ll need to make peach simple syrup and use that to sweeten your tea of choice. Click here for a great and simple recipe from Minimalist Baker!
  2. Once you’ve got your tea, you’ll strain the leaves (if applicable), let it cool, and sweeten with honey if needed.
  3. Place 4-5 thin slices of peach into your mold, then fill with peach tea.
  4. Freeze 8+ hours.

Now you’ll definitely be tempted to take your popsicles out after a few hours. They might look like they’re ready, but trust me…to get the best results and to ensure that your popsicle is solid all the way through, it’ll need the 6+ hours. Be patient and you’ll be awarded with delicious and cool (in all senses of the word) homemade treats to enjoy with your loved ones!
